I use 10mm up and down for the elevator, with 30 % expo, 12mm up and down for the ailerons, no expo, and I reduced the nose wheel travel by half, and use 60% expo on that.
For the CG, if you look on the underside of the wing just ahead of the tail booms you will see a small square formed by intersecting panel lines, that makes a good reference for the CG.
