Does anyone know what type of potentiometers are being used on the DIY chairs. One chair is titled Mikeys RC Real Aircraft Simulator.

Hi Skip, welcome to Hobbysquawk! I don't have much experience with sim chairs except for a few missions on a friend's War Thunder DIY rig. I'm not sure what he used. But I do have a fair amount of experience in electrical components in general, as one might expect.
Googling MikeyRC's chair setup, he also talks about linear variable differential transformers, or LVDTs. From a tinker's standpoint, these are fairly straightforward to create, and can, based on your precision in construction, yield excellent electrical linearity.
